The Terre dell'Olmo pasta factory
The Terre dell'Olmo pasta factory was born from the idea of being able to have a very short supply chain product, that is, to produce pasta starting from a small grain of wheat, to sow it, make it grow and take care of it until it is harvested, milled and made into pasta.
The typical taste of wheat, characteristic of the pasta of Terre dell'Olmo, together with the ancient genuineness of Salento wheat, reflects the tradition of homemade pasta and the deep-rooted rural culture of Salento.
The industrial pasta production developed for the use and consumption on the global market, made of a fast extrusion obtained by Teflon dies and rapid drying carried out at increasingly higher temperatures, have unfortunately penalized the quality of the pasta we generally eat.
Too often in fact, in the name of speed and high production quantities, modern industrial processes deviate from traditional practices and require some raw materials with a high protein content and often added gluten.
The packagings containing 10 packs of 500 g. can be assorted with different pasta shapes to choose from among those available.
