The flour and the semolinas derivated products of the Terre dell'Olmo company, in line with our company philosophy, are produced exclusively from an italian durum wheat of our own production.
This aspect, in addition to protecting the environment and supporting the local economy, as all
locally sourced products do, also guarantees the total absence of contaminants  such as mycotoxins that normally form in imported grains forced to face very long intercontinental sea transport.
At the Terre dell'Olmo company, we directly take care of theentire production cycle..
Nothing is left to chance: sowing,
harvesting, reaping, grinding  and packaging  are carried out with meticulousness and passion within our company business.
The Saragolla semolina and flour have exceptional organoleptic properties, being produced from an ancient wheat free from any form of genetic mutation.
Moreover, in our small mill, the wheat is sent to be milled without being "degerminated", this involves the manteinace of all the spicy flavours and the natural nutrients  present within the obtained semolina, which are therefore more  nutritious and highly assimilable,
digestible and therefore healthy. Furthermore , Saragolla wheat, compared to a quantitatively lower yeald compared to modern grains, guarantees a product which, not being genetically modified and enriched in gluten, is healthier, having like all the ancient grains, a more balanced relationship between the presence of starch and the presence of gluten, together with a much higher level of natural antioxidant (in particular Selenium, Beta-carotene and vitamin E) than other varieties. 

Especially in central-southern Italy this variety represented in ancient times the durum wheat par excellence. Investigations carried out on some charred remains of plants found in various settlements dating back to the Neolithic period testify, in fact, the cultivation of Saragolla wheat in most of Puglia (Salento Peninsula, Tavoliere foggiano and Murge Bari regions), Basilicata (Materano and Melfese) and Southern Campania (Salerno and Pompeii) - (Bibliography. Numerous scholars showed that Saragolla was one of the most common grains cultivated in Salento since ancient times. Among these was certainly Giuseppe Ceva Grimaldi Pisanelli (1777-1862), marquis of Pietracatella and trusted Bourbon envoy, appointed in 1817 intendant of the province of Terra d'Otranto. He gave news of it in his detailed book-report "Itinerary from Naples to Lecce and Terra d'Otranto in 1818", written on his return from his mission in Terra d'Otranto, where he was sent by the Borbons, worried by the spread of the phenomenon of banditry in the countryside.
