Cultivars used: Cellina, Nociara, Leccino (alternatively Ogliarola salentina), in variable percentages according to the year.
Harvesting system: mechanical shaking on sheets.
Harvesting period: between the second half of October and the first half of November.
Acidity: max. 0,8 grams of oleic acid in 100 grams of product.
Consistency: fluid, unfiltered; it is left to decant naturally in steel silos.
Colour: golden yellow with intense green reflections. Clear appearance.
Flavour: slightly bitter and spicy with an aftertaste of chicory.
Pairings: it enhances all the dishes of the Mediterranean cuisine and is ideal for the seasoning of raw food, preferably vegetables and salads of which it enhances its flavours
