Viticulture in Salento has its roots in antiquity. In particular, the cultivation of red grape varieties, originating in the Balkan area where the Illyrians were the first to cultivate the vine, saw its diffusion in our area thanks to the Phoenicians (2000 BC), a people of navigators and traders, ancient frequenters of our coasts. Proof of this is the consideration that the Greek colonization which took place in the 7th century B.C. introduced some typical vines of the Hellenic peninsula (precursors of Aglianico) throughout the south of the Italian peninsula, but not in Puglia where the production of red wine was already well established. And it gave "merum" that is pure ("mieru" in the Salento dialect) and not "vinum" which instead was a mixture of merum and water (or honey or something else).
The passing of millennia has then crowned Negramaro and Primitivo as the true dominators of Salento viticulture, in that clayey and calcareous territory which is the "Heel of Italy", bathed in sunshine and reaching out towards the sea from which it draws every beneficial influence.
All the company vineyards fall within the D.O.C. production area of the “Salice Salentino – red and rosé” and from their direct cultivation the wine production of Terre dell'Olmo started; it currently includes:
“Sciju” is a wine obtained from 100% PRIMITIVO grapes with an intense ruby red color, characterized by a broad and persistent aroma of fruit and spices. Structured and full-bodied "Sciju" is fermented in steel tanks and aged for 6 months in French oak barriques.
“Ucàla” is a typical rosé from Salento obtained as per tradition from 100% NEGRAMARO grapes. The maceration of the must in contact with the skins does not exceed 12 hours, thus giving the wine a very transparent light pink colour. It reveals delicate floral fragrances on the nose while it gives a balanced and fresh taste on the palate.
